This was a standard dinner for those evenings spent on our boat growing up. By the time our parents were able to drag my little sister and I out of the river we usually had a plate full of Hobo Dinner ready and waiting for us. To this day whenever we make this meal memories of those summer nights come flooding back to me.
Ingredients:
- 1 Pork Kielbasa
- 8 Red Potatoes
- 1/2 Green Bell Pepper
- 1/2 Red Bell Pepper
- 1/2 Yellow Bell Pepper
- 1/3 C. Chopped Red Onion
- 4 Cloves crushed Garlic
- 1/2 Stick Butter
- 3 T. Olive Oil
- Cooking Spray
Directions:
- Spray foil with cooking spray
- Cut up kielbasa, peppers, potatoes, onion and garlic.
- Toss in olive oil.
- wrap in foil with sliced butter and grill over medium heat for about 45-50 min.
