This Tomato Vinaigrette is great on salads and even better as a dipping sauce for breads. I  also like to serve with a meat, cheese and cracker tray to sauce things up! I try to keep a jar or two in the fridge to save time when preping a meal.


  • 2 Roma Tomatoes
  • 1 Clove Garlic (minced)
  • 1/4 C. Red Wine Vinegar
  • 1 C. Olive Oil
  • 1/2 Jar Sun Dried Tomatoes With Oil
  • 1 T. Dijon Mustard
  • 5 T. Lemon Juice
  • 1 T. Italian Seasoning
  • 1/2 Small Yellow Onion (diced)
  • Salt and Pepper to taste.


  1. Combine all ingredients in a food processor and pulse until almost smooth.
