Preheat oven to 350°F
Line 2 cupcake pans with cupcake liners
Prepare cake mix as directed on the back of the box
Fill liners halfway full and set aside
Make your filling: In the bowl of an electric mixer combine cream cheese, 1 egg, and 2 cups of powdered sugar until smooth
Add a spoonful (slightly less than a tablespoon) of the cream cheese mixture to the middle of each cupcake.
Bake for 18-23 minutes until cooked through
Remove your cupcakes from the oven and set aside allowing them to cool fully before frosting
Make your frosting: combine the butter, cream cheese, & vanilla until creamy
Slowly add the powdered sugar until you reach your desired consistency
