No Bake Holiday Energy Balls

Ingredients

  • 2 Cups Old-Fashioned Rolled Oats
  • ¼ Cup PB2 I use PB2 as this is a great lower-calorie alternative to natural peanut butter
  • 2 Tbsp Honey you could use maple syrup instead
  • 60 grams (~2 scoops) Vanilla Protein Powder I use 1st Phorm’s level-1 vanilla ice cream protein powder but any protein powder of your choice will do
  • ¼ Cup Green and Red M&Ms you could also use red and green semi-sweet chocolate chips
  • Cup Unsweetened Applesauce if you do not have applesauce, you can substitute with a banana
  • Cup Finely Chopped Almonds
  • Shredded coconut, cocoa powder, or finely chopped dried cranberries This is optional

Instructions

  • In a small bowl add the PB2 powder and water and mix until you have a creamy peanut butter consistency.
    Make sure you check the PB2 label pertaining to how much water to add to create the PB2 peanut butter. For ¼ cup (or approximately 4 tablespoons), this was about 3 tablespoons of water).
  • In a medium-sized bowl mix together the PB2 mixture, oats, honey (or maple syrup), vanilla protein powder, applesauce, and chopped almonds.
    I didn't have sliced almonds on hand so I just used my Ninja blender to chop up whole almonds.
  • Add in the M&Ms.
    I mixed the M&Ms with all of the ingredients so some of the protein powder got stuck to the M&Ms and ended up removing the M&M coloring coating. I ended up replacing some M&Ms after I refrigerated them so I'd suggest just adding these into the mixture last.
  • Roll your mix into golfball sized ball (or smaller) and place on wax paper.
    If you have an ice cream scooper, you can use that to get the perfect ball shape and keep the serving sizes consistent! If the balls are not rolling out smoothy you can also add non-stick cooking spray to your hands.
  • OPTIONAL: You can get creative and add to these by rolling them in cocoa powder, finely chopped shredded coconut, cranberries, or pecans. Make these your own by using experimenting with toppings that you like.
  • These are now ready to eat if you so desire. However, I recommend placing them in the refrigerator for a few hours to harden. After they harden a bit, place the energy bars in some holiday cupcake liners to make these even more festive and perfect for serving.
  • You can keep your holiday energy balls in the refrigerator in an airtight container for up to 1 month, or up to 3 months in the freezer. Enjoy!
