After years of being the baker in my family I have developed a couple go to favorites of my family and now my in-laws as well.  I love this recipe because it is super easy but still delicious and never fails to impress!  It also can be adapted to different peoples tastes.  I will go through how I make these bad boys and let you know where you can switch up different aspects of these crowd-pleasing goodies!

This recipe starts with a box cake mix.  You can honestly use any flavor cake mix or homemade recipe you want.  I like Devil’s Food cake mix the best, but have also used double fudge, red velvet and strawberry before and all worked very well. You can also pick what type of frosting you use whether you prefer can or homemade. I tend to top these beauties with homemade cream cheese frosting.

Cream Cheese Filled Cupcakes

Ingredients

Cupcakes

  • 1 Box Cake mix and the ingredients listed on the back of the box I like to use Devil’s Food Cake but feel free to use whatever cake mix you like!

Filling

  • 8 oz Cream Cheese room temperature
  • 2 Cups Powdered Sugar
  • 1 Egg

Frosting

  • 8 oz Cream Cheese room temperature
  • ½ cup Stick Butter softened
  • 1 tsp Vanilla Extract
  • cups Powdered Sugar
  • 2 Tbsp Milk optional

Instructions

  • Preheat oven to 350°F
  • Line 2 cupcake pans with cupcake liners
  • Prepare cake mix as directed on the back of the box
  • Fill liners halfway full and set aside
  • Make your filling: In the bowl of an electric mixer combine cream cheese, 1 egg, and 2 cups of powdered sugar until smooth
  • Add a spoonful (slightly less than a tablespoon) of the cream cheese mixture to the middle of each cupcake.
  • Bake for 18-23 minutes until cooked through
  • Remove your cupcakes from the oven and set aside allowing them to cool fully before frosting
  • Make your frosting: combine the butter, cream cheese, & vanilla until creamy
  • Slowly add the powdered sugar until you reach your desired consistency
  • For added creamy-ness add milk
